1st Course

Tuna Tartare with chives, shallots, lemon evoo, fennel pollen & shiso served on a Chinese soup spoon

Pairing: 4 Star Pils – German Style Pilsner

 2nd Course 

Cebuano Street Food Style Marinated Pork Belly with roasted squash and savoy cabbage salad

Pairing: Halia – Saison/Farmhouse Ale

3rd Course

Miso Buttercorn Soba with bay shrimp, bay scallops, and lemon cream sauce

Pairing: Sofie – Saison/Farmhouse Ale

4th Course

Kurobuta Pork Tonkatsu Rolls: taro marinated sliced pork belly, grilled and rolled with black pepper, negi, pecorino romano, and garlic. Panko breaded, deep fried, and served with a Japanese curried aioli. Vegetarian option available.

Pairing: Matilda – Belgian Strong Ale

5th Course 

Barako Coffee Rubbed Tri Tip with fried plantain

Pairing: Cooper – Barrel-Aged Scotch Ale

Dessert

Cheese Bibingka by Binka Bites with seasonal complements

Filipino sweet cassava cake served a la mode with a choice of flavors  from Frozen Kuhsterd
