A well-respected industry veteran, most recently Carol was Senior Vice President of Restaurant Operations for Levy Restaurants, one of America’s fastest growing and most critically acclaimed restaurant companies and a leader in premium sports and entertainment dining concessions.  At Levy, she was responsible for the operations of 30 free-standing multi-concept restaurants in diversified markets including Chicago, Orlando, Omaha, Milwaukee, California and Miami.  She’s also held executive positions with Kimpton Hotels and Restaurants and Wolfgang Puck Catering and Events. Carol’s expertise includes turn-around consulting for under-performing properties, concepting and re-concepting, development of operational infrastructure, creation of service and training standards and review of operational budgets.  In short, she knows how to make great hospitality profitable…oh and she rides a Harley. (Yeah, she’s kind of awesome.)
