Lucky Celebration Rice from E&O Kitchen and Bar

4 cups chicken stock
12 oz Coconut milk
½ of fresh turmeric root peeled and smashed
1 ea Kaffir lime leaf
1 tsp ground turmeric
2 Tbsp clarified butter
2 cups jasmine rice
2 Tbsp cilantro, chopped
For Coconut broth: In a medium sized heavy bottomed pot, combine chicken stock, coconut milk, fresh turmeric, kaffir lime, and ground turmeric over medium heat. Once it begins to simmer, turn heat down to low and keep at a very low simmer for 20 minutes. Remove from heat and strain, set aside.
To cook rice: Place 2qt pot over medium/medium-high heat and add the clarified butter. Once it is hot enough, add the jasmine rice. Over medium heat, while stirring constantly, cook or toast the rice in the butter for about 5-8 minutes. Add 4 cups of coconut broth and gently stir, lower the heat and let the rice gently simmer uncovered for about 20 minutes or until rice is tender. Once rice is cooked, turn off heat and place the lid on the pot to cover and “steam” the rice for 10 minutes. Remove the lid and gently fluff the rice mixture with a fork. Season to taste with kosher salt. Add chopped cilantro and serve immediately.
