SYRUP 32oz Squeeze Bottle

 

INGREDIENTS DIRECTIONS

11⁄2 cups Water
11⁄2 cups Sugar
21⁄2 tsp. Fresh Grated Nutmeg 3 sticks Cinnamon

1 thumb Fresh Grated Ginger peeled and pounded to release aromatics

1 tbsp. Pumpkin Pie Spice
15 Cloves
1⁄4 cup Sweetened Condensed Milk 1⁄2 cup + 4 tbsp. Pumpkin Pie Filling

1) In a saucepan, bring all the spices and sugar to a boil.

2) Turn off heat, allow to cool, then strain through a cheesecloth.

3) Add condensed milk and pureed pumpkin, stir.

* To make a 12 oz. latte, add 1 oz. syrup to cup, pour two shots of espresso on top, stir, add steamed milk, garnish with cinnamon.

Buffalo Theory Donates to Fire Relief all Month

Polk Street’s favorite craft beer bar will be donating $1 from each sale of two very special brews for the entire month of November to the fundraising efforts of ChefsGiving. Choose from Sonoma Pride by Bear Republic, who was invited to brew by Russian River Brewing for their north bay fire fundraising efforts, or Chocolate Hazelnut Porter from Fairfield’s Heretic Brewing Company.

 

More than 100 restaurants in the Bay Area and beyond are gearing up to give back with a weeklong fundraiser, ChefsGiving. The goal: To give at least $ 1 million to the Tipping Point Emergency Relief Fund, which directly supports low-income communities affected by the North Bay fires and to Restaurants Care, an emergency assistance fund for restaurant workers that was formed by the California Restaurant Association Foundation in response.

Acacia House Announces Feast of the 7 Cultures

From December 18th to the 24th, Acacia House kicks off their first holiday season with a special weeklong dinner series hosted by Chef Cosentino. Acacia House’s first annual Feast of the Seven Cultures will offer a weeklong dinner event highlighting seven star-studded guest chefs who will each create a one-night-only tasting menu based on the country they represent (Mexico, France, Portugal, Germany, Spain, Italy, California), which all represent the seven wine regions in which the concept for Acacia House is based.

 

The six dinners will feature a 5-course menu with both plated and family-style dishes from the following chefs. Dinners are $190 per person (excluding tax and gratuity) with an optional beverage pairing for $95 and can be purchased through Tock. Two seatings are available at 5pm-6pm and 7:30pm-8:30pm, and a portion of proceeds from the dinners will go to our friends at the Napa Valley Community Disaster Relief Fund.

White Truffle Season at Perbacco

The annual celebration of white truffle season at Perbacco ends on Saturday, November 18th. Make plans to enjoy the selection of dishes Chef Staffan Terje has created that are simply prepared and served with three grams of white truffles shaved tableside. Chef also selected a few black autumn truffles that will be featured in two of the entrees. Fire Relief Menu at Hakkasan SF

In response to the devastating wildfires spreading throughout Northern California’s Napa, Sonoma, and Mendocino Counties, San Francisco’s Hakkasan restaurant is donating 15% of the proceeds from three special menu items to aid in the relief and rebuilding efforts of those communities affected by the wildfires. Available until this Sunday, November 26th, generated proceeds will go to Redwood Credit Union North Bay Fire Relief and Farmer’s Guild. The special items include The Chinese Mule with Hanger One Vodka, Junmai Sake, cilantro, ginger, lime, and Fever-Tree ginger beer, Crispy Prawn Dumpling with plum sauce, and Green Tea and Apple Choux Bun with poached apples, green tea mousse, and apple sorbet.

Starbird San Jose Opening

Calling all chicken lovers! Starbird‘s second standalone location recently hatched in San Jose’s new Brokaw Center. Pay the new location a visit to experience their signature positively delicious chicken and from-scratch ingredients for lunch and dinner daily.

James Beard Taste America SF

Many thanks to all of our local supporters who attended this year’s James Beard Taste America event at Fairmont San Francisco on Friday, October 27th. The evening hosted San Francisco’s brightest culinary stars and raised crucial funds to support the James Beard Foundation’s mission and many programs, including scholarships for aspiring local culinary students. Thanks in part to your generosity, we are pleased to report this year’s event was our best yet!

 

Our Taste America® tour gathers 100 of our country’s most talented chefs to celebrate “local flavor from coast to coast.” In San Francisco, the stars shined bright with culinary talent. Our reception Chefs, David Barzelay of Lazy Bear whipped up his infamous scrambled eggs, Evan & Sarah Rich of Rich Table delighted with Olivier’s bacon–heirloom tomato toasts, Mourad Lahlou of Mourad served aged Lamb Tartare with osetra caviar and crackers, Val Cantu of Californios created Crispy Lobster Tacos, Melissa Perello of Frances and Octavia served up marinated Squid with jimmy nardello pepper relish, and host chef, Oscar Gonzalez of Fairmont served Spring Lamb Birria with hominy, chicatanas, and salsa roja.

 

James Beard Award Winner and National All-Star Hugh Acheson of Five & Ten, Athens, GA kicked off the four-course dinner with a fall vegetable salad with pickled shrimp, crisped wheat-berries, and uni boiled dressing, followed by liberty farms duck with yuba noodles, enoki mushrooms, and smoked vinegar broth from James Beard Award Winner and Local Star, Stuart Brioza of State Bird Provisions and The Progress. Chef Hugh dazzled guests with Grilled Snake River Farms Wagyu Beef New York Strip Steak with stewed wheat-berries and chestnuts; broccoli leaf kimchi, charred leeks, and beef fat vinaigrette. The dinner ended on a sweet note with Guittard Boca Negra Cake with candied ginger cream and huckleberries created by James Beard Award Winner and Local Star, Nicole Krasinski of State Bird Provisions and The Progress.

 

This major undertaking would not be possible without the participation of amazing patrons like you. We look forward to seeing you next year San Francisco!

Salt & Straw Gives Thanks and Gives Back

 Ice cream for dinner? Yes please! Salt & Straw has released five Thanksgiving dinner flavors for the month of November, from Buttered Mashed Potatoes and Gravy to Spiced Goat Cheese Pumpkin Pie. All five “courses” are available at the Salt & Straw in Pacific Heights, as well as their new location in Hayes Valley.

 

Beyond serving savory ice cream, Salt & Straw is getting into the spirit of the season by giving back. Salt & Straw will be donating a pint of ice cream to Food Runners, a San Francisco-based organization that works to alleviate hunger, for each Thanksgiving-flavored pint of ice cream sold.

 

The  November  flavors  will  be  available  from  Wednesday,  November  1  through  Wednesday,  November  22 and include:

 

Sweet Potato Casserole with Maple Pecans
Maple sugar, caramelized Oregon pecans, and marshmallow are added to a roasted sweet potato ice cream and topped off with hand-churned ribbons of homemade gooey maple fluff.

Homemade gravy fudge mixed into a potato flavored ice cream.

 

Persimmon Walnut Stuffing
Chopped pieces of homemade toasted stuffing made with walnut and bourbon raises mixed into a savory spiced ice cream. The spiced ice cream is made of olive oil, salt, pepper, and coriander. For a sweet finish, roasted persimmons are added.

 

Salted Caramel Thanksgiving Turkey
Turkey stock is cooked with sugar, spices and onions until it bubbles down into a caramel which creates the base of the salted caramel ice cream. Candy-coated roast turkey skins are then mixed into the ice cream.

 

Spiced Goat Cheese & Pumpkin Pie
Mashed pumpkin is folded into a goat-cheese ice cream sprinkled with pumpkin pie spices.

Dolores Park Cafe Celebrates 20 Years

Owners and wives, Rachel Herbert and Dana Oppenheim, opened the doors to Dolores Park Cafe 20 years ago and, together, created a space that has become a cornerstone of the Mission District community offering sustainable and locally sourced ingredients. As the first location of Park Cafe Group (now also including Precita, Duboce, and Paradise Park Cafes), Dolores Park Cafe opened at a time where the space between the Mission and the Castro could have been described as a “no-man’s land,” as quoted by Rachel Herbert in a recent article in Hoodline. Since then, the Cafe has taken a large role in helping uplift the neighborhood as a community gathering spot that supports local purveyors. The Cafe offers breakfast and lunch daily with a menu of fresh smoothies, house-made sandwiches, salads, and more. A rotating art exhibition on the Cafe’s walls features works by local artists, currently a reflective series by San Francisco-based Lucky Rapp.

 

On Saturday, October 7th, 2017, Dolores Park Cafe officially celebrated its 20th anniversary with live music performances, grilling on the patio, beer, wine, cocktails, tarot readings, henna, and treats for guests. James Beard Taste America SF

On Saturday, October 28th, join Taste America All-Star James Beard Award Winner Hugh Acheson of Five & Ten and James Beard Award Winner’s Stuart Brioza and Nicole Krasinski of State Bird Provisions and The Progress for a cooking demonstration at Sur La Table on Union Street to learn the tricks of the trade. Beginning at 10:00am Chef Hugh Acheson will guide guests through a lively cooking demonstration followed by a book signing of his book, The Chef and the Slow Cooker at 11:00am. Beginning at Noon, Stuart Brioza and Nicole Krasinski of State Bird Provisions and The Progress will prepare new dishes from their cookbook, State Bird Provisions followed by a book signing of the namesake cookbook at 1:00pm.

James Beard Taste America tour celebrated its second stop in the ten city culinary tour last weekend in Downtown Los Angeles at the Vibiana. The evening of culinary stars sizzled with a four-course dinner from James Beard Award Winner Barbara Lynch of Barbara Lynch Gruppo, Michael Cimarusti of Providence and Connie and Ted’s, and Pastry Chef Shannon Swindle of Craft Los Angeles.

 

The reception heated up the night with Howlin’ Ray’s hot chicken, delectable bites from local chefs such as hand crafted Tortellini en Brodo from Felix’s Chef Evan Funke, Dried Scallops with Creamed Endive and Caviar from Justin Hilbert of Maude, Spiced Tomato Broth with Watermelon from Kismet’s Sara Kramer, and Uni Shiokara paired with sake from David Schlosser of Shibumi.

 

The food fun continues later this month in San Francisco at Fairmont San Francisco on Friday, October 27th with Taste America All-Star James Beard Award Winner Hugh Acheson of Five & Ten and James Beard Award Winner’s Stuart Brioza and Nicole Krasinski of State Bird Provisions and The Progress.
